Pasta Carbonara!
This dish is a bit different from the usual recipie- I like to think of it as a healthier version as no cream/butter is used!
you need

2 Eggs (just the yolk of one)
1/2 cup of bacon pieces
1/2 of low fat parmesan and cheddar cheese mixed together
1 tablespoon of olive oil
3/4 cup of chopped parsley
whatever pasta you wish to use, I like spaghetti for this one

Whilst pasta is cooking, beat the egg and other egg yolk in a bowl. Cook bacon in pan with olive oil. When crisp add bacon , cheese and parsley to egg, mix well (the bacon and oil  from it will cook the eggs slightly and melt the cheese!) Once pasta is cooked add to carbonara mixture and salt and pepper to your taste!

There you go- delicious and easy!

Yummm, I just had this for breakfast at East Terrace Continental- Adelaide. Pancakes with a beautiful rich banana sauce, dusted with cinnamon. It also came with a shot of full cream. The perfect combination, wouldn’t mind waking up every morning to this…!!

Raw Caramel Slice
My second ever invented raw recipe!
Once you start making raw treats, over time you learn what goes best with each other, and can start to make your own! All you need is a simple nut base and you can blend your favorite ingredients for the topping!
For the Base I used:1 cup of almonds (soaked overnight)3/4 cup of pitted dates3/4 cup of ALREADY powdered almonds (you can powder them before I used my thermomix)
Blend all the ingredients together in a food processor or if using thermomix use speed 8 for 8 seconds, be careful not to completely powder them, the mix should be moist and stick together, if not you may have to add a little bit of water as you go to get the right consistency
For the Caramel topping I used:3/4 cup of cashews3/4 of walnuts2 tablespoons of maple syrup, but you can use any raw sweetener like agave3/4 ground almonds 2 table spoons of water
Blend all ingredients together, or in thermomix on speed 9 for 6 seconds. You want a nice smooth creamy texture with no lumps
Once you have made the 2, flatten out the base on a plate, leave it to set for about 30 mins, then smooth the caramel topping over! refrigerate for about 30 mins, then ready to serve! I sprinkled some  cinnamon on it!

Just made the yummiest toasted sandwich, with home made garlic mayonnaise, spring onion, avocado, tomato and chicken
To make the mayonnaise.. I made it in the thermomix but it can easily be converted!- 1 glove of garlic- 1 tablespoon of mustard (the hotter it is the more flavorsome the mayo is!)- 1 egg separated- 100g sun flower oil- 100 g of olive oil- salt/ pepper
Chop garlic up in food processor so extra fine then whisk egg yolk, mustard, salt and pepper with the garlic in a bowl for about 5 minutes, or until thickOnce thick then add both oils, make sure you drizzle them in SLOWLY, take about 5 minutes to drizzle it whilst whisking at same time. Once thick then add in the egg white for extra thickness. Try adding more pepper depending on how you want it to taste! you can even add onion powder for that extra savory flavor!
